Sometimes something that starts out as an ‘oops’ can turn into an ‘ooohhh!!’ Pancakes were my family’s request for breakfast this morning. I made half chocolate chunk and half lemon blueberry. Which turned into Smurfberry since the pancake batter turned completely blue! My kids thought it was hysterical. They are really yummy too! In a mixing bowl combine 1 cup all-purpose flour, 1/4 tsp baking soda, 1 tsp baking powder, 2 Tbs sugar, and a pinch of salt. In a separate bowl, add 1 egg and lightly beat. Then add 1/2 cup sour cream or ricotta cheese. Today I had ricotta cheese. Mix in 1 cup of milk and 3 Tbs melted unsalted butter. Add the wet ingredients to the dry ingredients. Add 1 cup of frozen blueberries to the batter. Frozen is the trick to making the batter blue, I have discovered! Fresh blueberries = no blue batter. Then add 1 tsp grated lemon zest. A microplane works best for zesting. Fold gently with a spatula until the blueberries and lemon zest are just combined in the batter. On a buttered griddle, spoon aboout 1/4 cup of pancake batter for each pancake. They will be small-medium sized cakes. Serve with maple syrup. Smurftastic!
